Pick over the beans - removed bad beans, and occasional rocks. Rinse dried beans with cold running water. Drain. Repeat two or three more times. Cover the beans with cold water and soak overnight or for 8 hours. Strain the beans and set aside. Heat an 8 quart heavy bottomed pot and add the olive oil. Sauté the onions and add the smoked pork and half of the sausage. Sauté for about 5 minutes or until pork and sausage are light golden brown. Add the garlic, jalapenos, celery and green bell peppers. Sauté for another 5 minutes. Stir in the bay leaves, dried thyme, oregano, ground cumin and cayenne. Add the beans, and chicken stock. Boil over medium heat. Reduce heat to low and simmer beans for 1½ - 2 hours or until tender ...
